Squash Patties (or zucchini) with vegetables are a great quick meal that you can have as a sandwich, on the side or with a salad. This is a great substitute for those that want a vegetable burger like sandwich.
Squash Patties
Ingredients
- Squash (or zucchini) - 3 small squash grated with skin or 2 cups zucchini grated with skin
- Green Pepper - 2 tablespoons, finely chopped
- Spring onion - 1 tablespoon, finely chopped
- Chili Pepper - 1 very small, finely chopped (optional)
- Onions - 2 tablespoons, finely chopped
- Eggs - 3
- All Purpose flour - 3 tablespoons
- Baking Powder - 1 teaspoon
- Turmeric - 1 teaspoon
- Salt - 1 1/2 teaspoon
- Pepper - 1/2 teaspoon
- Parmesan cheese - 2 tablespoons (optional)
- Cooking oil for light frying in the skilled (you can use Ghee, butter or sunflower oil) - Around 3 tablespoons
Steps

In a mixing bowl, combine the squash (or zucchini), green pepper, spring onion, Chili pepper (optional) eggs, flour, baking powder, turmeric, salt, pepper and Parmesan cheese (optional). Mix well and distribute ingredients evenly. It should be somewhat liquid like but intact in order to make the patties.

Heat the skillet with the cooking oil on medium heat and drop mix by tablespoons in the pan. Lightly fry on each side till they are golden brown or darker depending on how you like them. They only need a couple of minutes.
You can make these in a sandwich. You may also want to create your own mix and add grated carrots and corn kernels. They are delicious in a sandwich or with a salad.
Tip
If you want this to be gluten free, you can substitute the regular flour for gluten free flour.
