We pair deli-style turkey slices with roasted bell peppers in this delicious Turkey Club Sandwich. We use country bread, but feel free to substitute with regular white, wheat, rye, or even baguette. This roasted bell pepper sandwich with turkey offers unmatched taste, especially with the paprika mayonnaise. It’s perfect for lunch or dinner, packs great for school or office lunches, and is also an excellent choice for picnics.
Turkey Sandwich with Roasted Red Bell Peppers and Paprika Mayo

- Step 1
Mix mayonnaise and paprika well in small bowl. Set aside in fridge.
- Step 2
Roast your bell pepper in preheated oven (about 400 degrees F) by laying bell pepper on its side on a baking pan, lined with foil. Roast or 15 – 20 minutes on one side and then turn to the other side for another 15 -20 minutes. Cool for 15 minutes and then peel skin off, pull stem off, cut pepper into 2 – 4 pieces, clean out seeds. Set aside.

To assemble your sandwich, spread paprika mayonnaise on both pieces of your country bread.
- Step 4
On one pieces lay half of the turkey slices and then add the roasted bell peppers.
- Step 5
On top of the bell peppers, neatly assemble all the spinach leaves.
- Step 6
Put remaining turkey slices and close sandwich with other piece of bread.
Tip
Roast your red bell peppers ahead of time and refrigerate. They are easy to make and to store. Will keep well in the fridge for days.
