Grain or potatoes au gratin is great to serve along with your meat or chicken main course. Au Gratin potatoes are loved by all at anytime – even for Breakfast (and especially Brunch). This dish should be served hot. Here, we give you our own version of Au Gratin by using shredded potatoes instead of sliced potatoes; We also use plain low fat milk without any cooking cream to keep it light. We also opt to use shredded, aged, Parmesan cheese instead of the traditional Swiss Gruyere to give it a special, unforgettable taste. This dish has been tested on kids several times and has always passed with flying colors!
Shredded Potato Gratin: A Cheesy and Herby Delight

- Step 1
Wash and peel potatoes. Prepare a baking dish by lightly oiling it with vegetable oil. Dish should be about 6″x9″ and more than 2 inches deep.

Chop the onion into small pieces and add it to a large frying pan or shallow cooking pot with 4 tablespoons of vegetable oil. Use Medium heat only. Cook onion till translucent, for about 5 -7 minutes. Turn heat off, leave onions in frying pan or shallow pot while you shred the potatoes.

Wash potatoes one more time by running them through your tap water and then dry them with paper towel.

Shred the potatoes using a shredder. Preheat oven to 350 degrees F.

Add the shredded potatoes to the onions in the frying pan. Turn heat on again to medium high heat and cook potatoes and onions together stirring gently for about 5 minutes.

Add the butter to the potatoes and stir till melted, about one minute.

Add parsley, rosemary, nutmeg, salt to the potatoes and mix gently, about one minute.

Add the milk and gently stir into the potato mixture till it is well blended, for about 2 minutes. Add half of the shredded Parmesan cheese and mix into the potatoes. Season potatoes with more salt if desired at this point.

Transfer the potatoes to your oiled baking dish, spreading it evenly.

Sprinkle the remaining Parmesan cheese on top of the potatoes.

Bake for 30 – 35 minutes till browned on top. Serve while hot.
