You will not believe how easy it is to make this pinata cake recipe. You won’t need to buy a special mold or baking pans; simple 9-inch round pans will do just fine. We chose to make this cake using our own vanilla cake recipe and simple buttercream frosting. Fill the cake with your favorite candy, such as gummy bears, chocolate morsels, or hard candy. Pinata Cake Recipe – Delicious Vanilla Cake for Birthdays
Ingredients
Vanilla Cake Batter
- Butter, Softened at Room Temperature - 200 grams
- Vegetable Oil - 1/2 cup
- White Sugar- 1 1/2 cup
- *Vanilla Extract - 1 1/2 teaspoon
- Baking Powder - 2 teaspoons
- Baking Soda - 1 1/2 teaspoon
- Salt - 1 teaspoon
- Eggs - 4
- Egg Yolk - 1
- White Flour - 3 1/2 cups
- Milk - 1 cup
Buttercream Frosting
- Butter, Softened, Room Temperature - 400 grams
- Vanilla Extract - 2 teaspoons
- Icing Sugar, Sifted - 5 cups
- Salt - 1/4 teaspoon
- Milk - 3 tablespoons
Filling and Cake Decoration
- Colorful or Chocolate Sprinkles
- Favorite Assorted Candy or Chocolate Bars cut up into pieces (without wrappers)
- Gummy Candy (without wrappers)
Steps
- Step 1
Make The Cake
Preheat your oven to 350°F (175°C).
- Step 2
In a mixing bowl of electric mixer, beat butter on medium speed till butter is light and fluffy, about 3 – 5 minutes.
- Step 3
Add the vegetable oil and continue beating. Next, add the 4 eggs and egg yolk. Beat for an additional 2 minutes.
- Step 4
Add the sugar, baking powder, baking soda, vanilla, and salt. Beat for 2 or 3 minutes.

Add flour in batches while running your electric mixer till blended with everything else.
- Step 6
Add your milk and blend well with the batter. Batter should be smooth but still thick.

Spread batter evenly and equally into your pans and put in middle rack of your preheated oven for about 25-30 minutes. Check for cake doneness with toothpick (toothpick should come out clean when inserted in middle of cake).

Allow cake to cool completely while you are making your frosting.

Make The Frosting
In a deep bowl, cream your butter with an electric mixer till light and fluffy for about 5 minutes.

Add the vanilla, milk, and salt and continue beating.

Add sifted icing sugar in batches till well blended into butter mixture. Frosting should be thick but easy to spread with frosting spatula. If you need to make it softer, add a bit of milk, if it needs to be thicker, add sifted icing sugar.

Assemble Your Pinata Cake
Line your serving platter with wax or parchment paper. Note you will take this off once you are done assembling your Pinata Cake so it is best to put 2 pieces of wax paper that meet in the middle of the platter. Purpose of the wax or parchment paper is to simply keep your serving plate clean while you frost and decorate your cake.

Place one layer of the cake in the middle of the platter and cover it with frosting.
- Step 14
In a separate plate or surface, take two layers of the cake, place them on top of each other, and using a sharp kitchen knife, cut a circle in the middle, leaving at least 2 – 3 inches on the sides of the cake to create a hole. Take out the extra cake circles in the middle. You will not need them for this Pinata Cake.

Take one of the layers with a hole and put it on top of the cake in the serving platter. Cover this layer with frosting, including the inside edges of the hole. Repeat with the other cake layer with hole.

Cover hole with colorful sprinkles. You need to do this so that the candy in the cake does not stick to the frosting. This makes it easier for the surprise to fall out of the cake when the first piece is sliced.

Fill the hole with your favorite candy! Fill it up all the way to the top. Do not leave an empty space at the top of the hole.

Put last layer of cake on top of the third layer and cover the top and all the sides of the cake with frosting. Decorate with candy or anyway you like! Enjoy!
Tip
*Use fresh vanilla pods if you have them handy instead of vanilla extract. You will need 1 pod for every 1/2 teaspoon. Make sure cake is completely cooled before frosting it.
