Fava Beans and Chickpeas Recipe Fusion
Ingredients
- 1 1/2 cups of cooked, soft fava beans (canned may also be used), keep juices
- 1/2 cup cooked chickpeas
- 3 tablespoons of lemon juice
- 1 teaspoon cumin powder
- 1/2 teaspoon salt
- 2 cloves crushed garlic
- 1 fresh chili pepper
Topping
- 2 small tomatoes chopped into small pieces
- 2 tablespoons chopped flat leaf parsley
- 3 tablespoons chick peas, cooked
- A sprinkle of dried chili pepper flakes
- olive oil
Steps
- Step 1
Combine the fava beans and chickpeas in a medium sized cooking pan over medium heat. If you don’t have juices from either the fava beans and chickpeas, add about 1/4 cup water. Bring to a boil.
- Step 2
Lower heat to medium low, add lemon, cumin, salt, and garlic. Using a fork, while the fava beans and chickpeas are cooking, slightly crush the beans – you don’t have to crush them all or make it too smooth, just vary the consistency and let some of the flavor from the beans come out. Do not cook more than 10 minutes.
- Step 3
Take off heat. Transfer to serving plate.
- Step 4
Garnish with toppings and serve with pita bread.
Tip
Serve this with warmed pita wedges or your favorite bread, any time during the day!
