Basic Ful Medames (Stewed Fava Beans)
Ingredients
- 2 cups of cooked, soft fava beans (canned may also be used), keep juices
- 2 tablespoons of lemon juice
- 1 teaspoon cumin powder
- pinch of cinnamon
- 1/2 teaspoon salt
- 2 cloves crushed garlic
- 1 fresh chili pepper
Topping
- 2 small tomatoes chopped into small pieces
- 2 tablespoons chopped flat leaf parsley
- olive oil
Steps
- Step 1
On medium heat, put small cooking pot with fava beans in it.

Add lemon juice, chili pepper, cumin, salt, garlic, cinnamon, and juices. If you do not have juices, use 1/2 cup water.

Bring to boil and then let it simmer on low heat for 15 minutes. Make sure it does not dry out by adding water if necessary (just enough to keep beans moist and bubbling). Add more lemon juice if needed (according to taste).

Transfer the ful medamus to serving plate. Arrange chopped tomatoes on top of you Ful while it is still hot. Spread parsley on top of the tomatoes. Drizzle olive oil generously. Serve immediately.
