Make the Banana Cake Frosting
With an electric mixer on medium speed, cream the butter and cream cheese together for a couple of minutes.
Add the thick caramel sauce with salt and vanilla and continue mixing for about 2 minutes till everything is well blended.
If your icing sugar, appears lumpy, we recommend that you sift it before you use it. Gradually, add the icing sugar to the rest of the ingredients in the mixing bowl and continue blending on low speed with the mixer. Do not over mix and do not prolong this step. Put your frosting in the fridge for later use.
Make the Banana Cake
Preheat oven to 300 degrees F.
Add lemon juice to your mashed bananas and leave aside.
In a mixing bowl or electric mixer on low speed, add your butter, oil, eggs and sugar and beat for a few minutes till all is well blended, about 5 minutes.
Add vanilla, baking soda, salt, and buttermilk. Continue mixing till well blended, about 2 minutes.
Gradually start to add the flour to the mixing bowl, blending all the ingredients well, for about 5 minutes.
Add the banana lemon mix to the mixing bowl and beat for an additional 2 minutes till bananas are mixed well with the rest of the batter.
Transfer the cake batter into a buttered and floured baking pan.
Bake for 1 hour the banana cake till toothpick comes out clean.
Cool the banana cake completely, and then cover it with the frosting (top only), and then put back in the fridge till you are ready to serve it. Note, you can decorate the cake by sprinkling 1/2 cup chopped walnuts on top, if you wish.
If you don't like nuts, consider decorating the cake with fresh banana slices or banana chips for an added crunch.
